There are an infinite number of tours, places to visit, it is best to plan a little what you want to do and work to it. Time spent researching is time well spent.
Restaurants/ places to eat are everywhere and usually pretty good, service will vary according to cost, the food itself is usually good.
I used taxis most of the time , the system works well and you can always get a taxi outside the hotel. I wouldn't ride a motor bike although others might be braver than me, the traffic around HCMC has to be experienced to be believed

On my first night in Saigon I got robbed after I accepted a ride from a motorcyclist. Apart from the obvious lesson learned from this experience, I was also careful from then on to carry at least $50 with me and not much more.
The guy who robbed me (who pulled up on another motorcycle) had a gun and didn't seem to have a sense of humour.
I've also heard stories about professional pickpockets frequenting the area around the Metropole.

Rather than taking taxis and cyclos, etc, its much easier to just rent a motorcycle for $4 USD and you can go anywhere you want. Just be careful of police because they love to pull you over and make you give them money on the spot before they'll release you.

I think we spent too long in Hanoi, a few day would be more than enough. Just too many people trying to sell you stuff. We did trips to Ca Ba Island and Sapa, both of which were fantastic destinations, be careful what tour you get, and complain if its not what you were expecting.

Vietnam... what can I say about it. At times it's like night of the living dead with deformed and maimed people lurching out at you and hobbling after you at every turn looking for some money to buy food with. At other times it is the most beautiful, serene place filled with happy families working together and living a simple but fulfilled life in their tropical paradise. I've been there three times and each trip is eyeopening in many ways.

Hanoi is very Sino-European both in terms of the feel of the place and in the architecture. It is amazing to walk along the narrow streets, so old and so charming. Strolls around the big lakes in the evenings are wonderful, they are alive with activity. Polite refusals to hawkers are normally met with a smile, but I know of some cases where the "You are in our country, you should pay or leave" mentality raises its ugly head. Try Highway No. 4 bar for some traditional Hmong liquor concoctions (don't ask what is in them, though the menu gives the full description!)...

I had drinks on the roof at the Caravella Hotel which was fun talking with others. Down the street from there was the LemonGrass Restaurant which was very good ( beer, duck, soup etc.) for about eight dollars. Not too much to see or do in HCM--more in Hanoi. I did not have any trouble but others warned me to be careful of my money down by the river, etc.

Be careful with the taxi drivers and cyclo drivers. Make sure the taxi drivers turn the meters on and the cyclo drivers know where you want to go. They will try and rip you off.

Vietnam is a great place to visit, had bad experience with Cyclo driver that picked us up outside hotel, inital rate agreed apon was $2/hr but when we dropped off he said it was $3/hr, very hard to win arguement.

Hoi An is a great destination but is becoming a bit touristy. The postcard selling children are very persistent and we saw one incident of aggressive behaviour from one of these sellers. We would recommend Des Amis and Yellow River restaurants - both have fantastic food that we didn't find in other parts of Vietnam (try the "white roses"). We took two tours with Seventeen Tour Company (across the road from Hoi An Hotel) and would recommend them. They offer inexpensive and well organised tours. The tour to My Son with boat return is highly recommended.
