Stayed at  Saigon Can Tho Hotel - Can Tho, Vietnam.
Be certain to take a tour of the Mekong Delta while in Can Tho, and unless you like feeling and looking like a tourist, go with one of the local ladies that solicit their own cruise business along the riverfront. You get private use of their own personal long-tailed boat all morning long and their own colorful commentary on Mekong Life-- an authentically local experience vs. being with 20 other tourists in a large tour boat hearing a tour guide over a loudspeaker. You see the famed floating markets, manmade canals and tributaries of the delta, and endless fruit orchards along the shores. All for $25 US for a 5 hour experience. Ask if the boat has a shelter over the top with open sides. If not, be sure to take and use sunscreen. 5 hours is a long time to be out in the strong Mekong Delta sun, but also richly rewarding.

For lunch or dinner I highly recommend So Hom restaurant, located right on the river in the enclosed market area. The Mekong Delta Style fish soup with pineapple and herbs, Local River Fish Caramelized in Clay Pot, Stuffed Pumpkin Blossom Fritters, and Fresh Bananas Flambeed tableside with Rice Whiskey and served with Coconut Ice Cream were all winning menu selections. And you can't beat the ambiance of watching the river life go by while you dine.

Stayed at  Victoria Can Tho Hotel - Can Tho, Vietnam.
I could use the shuttle boat from hotel to town. It was very conveniently. But the hotel location was not so good. I should go by taxi and it takes about 4 hours from Ho Chi Minh City.

Spices Restaurant in the hotel was decent. Lots of different Asian dishes but not one was authentic in taste.

Tour the nearby narrow canals to get a glimpse of life in the Mekong Delta. Can negotiate better rates with boat operators directly, rather than booking through your hotel. Floating market nearby and worth visiting, again via boat.

Bustling with activity, Cantho is a great place to explore the Mekong delta from. The floating market is alone worth the trip down from HCM City.

Stayed at  Victoria Can Tho Hotel - Can Tho, Vietnam.
Had dinner at a restaurant called Nam Bo that was wonderful; seems to be a stop on the tour bus route though so if more local flavor is your style, this might not be the place. Market is fun to walk through and taking a boat ride down the Mekong also fun. People in this city are so friendly and enjoy showing you their surroundings.
