Siem Reap was rather a surprise - enormous hotels half full, and a lack of certain infrastructure in the town itself. Some hotels were quite charming, but on the whole the hotels looked a bit like monoliths and almost out of keeping with surrounding countryside.
I booked two days of car hire with driver and guide through the reception desk of the hotel. It's really necessary to have a guide there as otherwise you lose a lot of the history and the temples are quite spectacular. The locals seems to be jumping on the tourist bandwagon and are quite happy to rip you off. This is in contrast to Vietnam where they can also rip you off but do it in a much nicer way.
I recommend the Bayon II restaurant with Apsara dance show for USD11 all up and also the Bopha Angkor restaurant.

Angkor is a magic place. It is a must visit if you are in Asia. If you like photography try to go to the temples very early in the morning or after four o'clock in the afternoon so we can get a better light. We went during April, but I would try visiting Angkor in October when the water level in the lakes and rivers surrounding the temples are higher.
Don't miss visiting the center for arts & crafts where they teach the local people how to do wood-carving, sculptures in stone, different items in silk and metal work.

A truly awesome destination and very easy to get around. We arranged a car through the hotel for most of our stay and appreciated the air conditioning! We ate most of our meals in the hotel but enjoyed the food and the atmosphere of the FCC at lunchtime.

Be wary of the taxi drivers at the aiport, although they will take you into town for a less than average fair they then ask to be your driver for your whole stay, fine until they double the price on the third day when it's too late to make other arrangements, and your 'too English' to haggle effectively!

Good news for Angkor toliet situation. 5 months ago the company that runs Angkor installed new toliet facilities at each of the major temples. They are western type, tile floors, even soap and cotton hand towels are provided. Just show you Angkor pass, otherwise there is a 2,000 R use fee.

The reason you go to Siem Reap is Angkor, there is no doubt about that. I purchased a 3 day pass which is more than enough to see the highlights and also some of the "lesser know" temples.
I had great success in hiring a guide through the taxi driver sent by the hotel, to pick me up from the airport. He spoke good English and 45 minutes after my arrival he came back to the hotel with Sophat who, though he appeared to be young, was government certified and had 5 years of leading tours under his belt and was very knowledgeable. The driver also took me to see an Aspara dance show one evening and remained at the restaurant to take me back to the hotel at its conclusion. There is also a dance show directly across from the hotel, but it was quite a bit more expensive. I would also recommend the Madame Butterfly restaurant with excellent food and nice atmosphere.
